#recipe ideas with simple ingredients for #quarantinecooking fun!

I've received two email chains with a subject: Quarantine Recipe Exchange. It's a #socialdistancing activity that encourages the receiver to experiment in the kitchen and try out home recipes from senders.

That email then inspired me to share personally selected recipes I've enjoyed making at home. To be honest, one of the activities I have a better appreciation for now is home cooking and baking. My mom's the ultimate chef of the home!

Needing only simple ingredients which you can source from your local supermarket, here's how I've come across these easy to cook and healthy quarantine recipes:

1. I first encountered the omurice is a Japanese Netflix series called Midnight Diner. Because I love eggs, Gudetama, and simple food, I've been curious as to make this on my own. I can say that omurice is your all-day kind of meal.

Instead of ground or finely chopped beef/pork and shrimp/chicken as Korean Bapsang indicated, I used our leftover made-from-scratch ground meat mix (from a Torta dish, also my mom's version). I also added sesame oil to the rice once it was ready to be topped on the omelet. Omurice is also good with hot sauce (hehe).

2. I saw this in an Instagram post and decided to look it up on Google as well. This bruschetta recipe is a modified version: a combination of all the recipes I've browsed through. Here's a

healthy snack idea to munch on.

3. All that Kdrama Netflix series I've recently watched had me crave Kimchi Rice. I also used to have this (and often) for breakfast or lunch, able to buy from a Korean Fruiteria nearby my former office building. I finally had the chance to try it out for myself and have it at home.

For this, you may add seaweed strips with sesame seeds or bonito flakes & dried egg rice seasoning as toppings. I like my eggs well-done; hence having that toasted look. I also ate this with leftover homemade dumplings (by mom) as seen in the photo.

4. My youngest sister who loves to bake and experiment convinced me to go do this recipe with her. It was on a Sunday afternoon and we were thinking of activities to do. Luckily, we had the ingredients at home.

We decided to add crushed mixed nuts. We divided the batter mix: one containing only the chocolate chips and the other, choc chips mixed with nuts.

P.S. Happy Quarantine Cooking! :) Share with me your versions or new recipes you've tried.
